How To Make it:

Prepare rice according to instructions on box.

When rice is done, stir in chicken or chickpeas, and divide into bowls. Top each bowl with desired amount of tomatoes, cucumber, cheese, and pistachios.

While rice is cooking, combine olive oil and lemon juice and season to taste with salt and pepper.
